Carrot Salad


While spring may not be exactly "here"... warmer Colorado temperatures are tempting me to cook up some more "summer-y" dishes in the kitchen.  Like this carrot salad, for instance!  It'd be perfect as a side with hamburgers or hot dogs, don't you think?  Or even by itself for a light lunch...

CARROT SALAD
Wash and peel four carrots
Shred carrots (can be done quickly and easily with the peeler)
Add just enough "Sweet and Hot" prepared mustard to lightly coat 
Serve chilled! (looks striking in a glass bowl)
